This Chef Spotlight is an 8 min clip from our Pagosa Springs, CO trip. Here we learn to make Stuffed Tilapia with Chef Ross Fraser. Chef Fraser used to cook for the British Royal family, but we found him at the Keyah Grande Resort.

In this episode of into the Soup, we travel to the eclectic town of Pagosa Springs, Colorado or as we like to call it "No Hassle Colorado." We visit the 5-star Keyah Grande resort where we shoot skeet and cook stuffed tilapia with their world-renowned Chef Ross Fraser. Then we tube the San Juan River and saddle our horses for a ride the locally famous Pagosa Brewing Company and try their signature salmon and chips and bison burger. It is a contrast of elegance and down-to-earth fun. Join us.

In this vignette, we profile Chef Joshua Hebert and his restaurant POSH. Joshua is competing in the C-CAP Heavy Medal contest on September 21 at the Scottsdale JW Marriott. The proceeds go to send at-risk kids to culinary school. Check out this unique, improvisational restaurant.
