Mostly Meatless Mondays! Parmesan and Thyme Crackers

I found this recipe in my stash and thought it might be a nice addition to our Mostly Meatless Mondays and your Holiday appetizer menu.

It's surprisingly simple and you can store the dough for up to 6 months in your freezer.  To top off all that, the cheese and the cracker come in one nifty little package.  So much easier to hold that glass of wine in your hand as you nibble.  Enjoy!!

Spanish Garlic Soup

What good cook doesn't have at least 4 cloves of garlic in their pantry at all times?  This is a very simple, yet surpising, dish with a lovely little egg cooked right in each bowl and hearty enough to stand on it's own for lunch or a light dinner.  Add a bottle of Pinot Noir, some candles and a few breathmints and ramp up the romance.  May I suggest The Gypsy Kings as your background music....of course, I can!!!

Michael's Beef and Mushroom Pie

So my brother (Michael) would secretly like to live in England or Scotland (hmmm… I guess it’s not a secret anymore!). This is his version of the well-loved English dish, Steak and Mushroom Pie. Serve with ‘mash’ (aka mashed potatoes) for a truly British experience. Some notes from Michael… “I often cook an entire roast (pork, beef, or whatever), divide it into portions, and freeze.  It’s easy to take out portions, thaw, and add to recipes like this one.”

Culinary School Beef Barley Soup

Heidi asked me to pull out a soup recipe this week… (yikes!) Off the top of my head, this was the most ‘down home’ recipe that we made in culinary school (American Regional Cuisine—recipes of the Central Plains). Ginger Chicken Stir Fry

Homemade English Muffins

I suppose this is technically not a ‘sweet’ recipe, but the smell of fresh bread (English muffins in this case!) makes me think of cooler weather so I thought it would be appropriate for the ITS audience. Homemade English muffins are definitely worth your time and effort. These muffins are baked versus cooked on a griddle, giving you time to contemplate yummy toppings… butter, honey, jam, peanut butter, butter (did we mention butter?)… endless possibilities!
